What recipe did you fix - that you got the most compliments for?
This year it was my sweet potato's with marsmallows. I don't know why, I fix it every year. But this year everyone thought it was really good. I got more compliments on it than anything else. Maybe the 'sauce' was more praline like.
I did tell my family, that I think the secret to better flavor for the SP is to bake them before candying them. Boiling them gives them a watery flavor and baking sort of 'carmelizes' the flavor or the natural sugars in the SP.
My Sauce recipe is sort of 'butterscotchy' made with Karo syrup, brown sugar, cream, butter, salt and cinnamon. You have to be sure to bring it to a boil for 5 minutes. This year I made it with the dark Karo syrup instead of the white. I wonder if that made a difference?
