I was just thinking about my garden and right now I have a lot more stuff than I know what to do with. I was wondering if anyone here does any canning and if there were any good recipes you would be willing to share.

I guess the season is over now. What kind of vegetables do you have in your garden ? I love making jam and always try out various combinations. I tried making sweet & sour pickle relish this summer but I only found one recipe and it turned out rather sweet so I'll have to try it again.
I've never actually canned vegetables but these things do interest me.

I used to can a lot years ago, but then I went to freezing a lot of stuff. The last few years I have not done either. What are you canning? Also you can go to the website of the people that make the canning jars and they have basic canning recipes. I think it is called the 'Ball Bluebook Guide' and that really tells you what is safe and unsafe etc.
Also contact your state university extension center and they usually have good tips etc. In fact they have more knowlege on the subject.
You would be surprised at some of the things that you can put up. Like Garlic!!!

From April to Oct, they put out a monthly newsletter in email regarding canning and freezing etc. This newsletter is excellent.
