View Full Version : Pumpkin cookies: With Option for Sugar free/low fat

Old Fashioned Pumpkin Cookies

Yield 30 cookies

Preheat oven to 350 and grease large cookie sheet

2 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 or 2 tsp ground cinnamon (according to taste)
1 or 2 tsp ground nutmeg (according to taste)
1 tsp ground cloves (I added this because I love cloves)
1/2 cup butter or Smart Balance (reg or light)
1 1/2 cup sugar or Splenda
1 cup pumpkin puree (canned or fresh)
1 egg
1 tsp vanilla

Mix flour, soda, baking powder, cinnamon, nutmet and cloves and set aside

Mix pumpkin, butter or smart balance and sugar or splenda until creamy
Add egg and vanilla and mix well.

Combine flour mixture and sugar mixture until well mixed.

Drop by rounded tablespoons onto greased cookie sheet.

Bake 15-20 minutes. Enjoy. They are delicious.

Pumpkin cookies without pumpkin?
But it sure sounds wonderfull.

LOL. oops. Went back and added the cup of pumpkin. Glad you pointed it out.
