Caramel Nut Jar Cake



INGREDIENTS
2 cups packed brown sugar
2/3 cup white sugar
1 cup butter, softened
4 eggs
2/3 cup milk
1 tablespoon vanilla extract
3 1/2 cups all-purpose flour
1 teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
1 cup chopped walnuts

DIRECTIONS
Sterilize 6 (1 pint) straight sided wide mouth canning jars, lids and rings by boiling for 10 minutes. Keep the lids and rings in the hot water until needed. Preheat oven to 325 degrees F (165 degrees C). Dry jars and let them come to room temperature. Grease insides of jar well.
In a medium bowl, sift together the flour, baking powder, soda and salt. Set aside.
In a large bowl, cream sugars and butter with electric mixer. Add eggs and mix well. Add milk and vanilla and mix well.
Add flour mixture and blend with a large spoon. Gently fold in nuts.

Place 1 cup batter into each of the greased one pint wide mouth canning jars. Wipe any batter from rim. Place jars on baking sheet. Bake at 325 degrees F (165 degrees C) for 50 minutes or until toothpick inserted deep into center of cake comes out clean.

Make sure jar rims are clean. (If they're not, jars will not seal correctly). While jars are still hot, place lids on jars, and screw rings on tightly. Jars will seal as they cool. Place the jars on the counter and listen for them to "ping" as they seal. If you miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed.

Keep in refrigerator for prolonged storage.

Now for me I prefer it cooked and ready to eat.
Best ever Fudge

INGREDIENTS
2 cups white sugar
1 cup milk
1 teaspoon vanilla extract
1 cup butter
25 marshmallows, quartered
2 cups milk chocolate chips
2 cups semi-sweet chocolate chips
2 (1 ounce) squares unsweetened chocolate
1 cup chopped pecans
DIRECTIONS
Grease 1 - 11x16 inch jelly roll pan. Set aside.
Combine sugar, milk, vanilla and butter in large, heavy saucepan. Bring to a boil, stirring occasionally. Boil for 2 minutes.
Remove from heat and add marshmallows, semi-sweet chocolate chips, milk chocolate chips and unsweetened chocolate. Stir until melted and smooth. Stir in nuts. Mix well.
Pour into prepared pans. Let fudge sit at least 24 hours before cutting into squares. Refrigerate for easier cutting.

Gingerbread Caramel Corn

15 cups popped corn
1/2 tsp. salt
1 cup butter
2 cups packed brown sugar
1/4 cup corn syrup
1/4 cup light molasses
1 Tbsp. ground ginger
1 tsp. cinnamon
1/2 tsp. baking soda
1/2 gal eggnog

Drink the eggnog
Preheat oven to 250 degrees F.
Place popcorn into 2 13x9" pans.

Mix together salt, butter, brown sugar, corn syrup, molasses, ginger and cinnamon in a heavy, large saucepan. Heat over medium heat until mixture comes to a boil, stirring frequently.

Boil for 5 minutes. Remove pan from heat and mix in baking soda. Mixture will foam up - this is why you need a large pan!

Pour this foamy mixture over popped corn in the prepared pans and mix thoroughly. Bake both pans at 250 degrees for one hour, stirring every 15 minutes, until corn is glazed and crisp. Cool completely, then store in festive airtight containers. Decorate with ribbons and bows.

these are two things i make every year where we were in one place i use to sell these at the local shop,the truckies loved them
CHOCOLATE RUM TRUFFLES
4oz butter
3/4 cup icing sugar sifted
1 cup finely grated chocolate
2 tablespoons rum
1/2 cup cocoa
1 cup desicated coconut
1 1/2 cups mixed fruit (dates,seeded raisins,glace cherries,ginger)
chocolate sprinkles or cocoa

1.Beat together butter and icing sugar until light and fluffy.
Add the grated chocolate and rum,beat well.
2.Fold in the cocoa,coconut and mixed fruit.
Roll the mixture into small balls and toss in the chocolate sprinkles or cocoa.
Chill to firm.

now this is a well tried and true aussie recipe,basically nearly every household has this every christmas
WHITE CHRISTMAS
2 cups rice bubbles (rice crisps)
1 cup mixed fruit
3/4 cup icing sugar(confectioners sugar)
1 cup coconut
1 cup powdered milk
250g copha (hard white shortening)
vanilla
1.Mix all dry ingredients together
2.Melt copha,add vanilla and pour over mixture
3.Mix well together
4.Press into a greased flat tin
5.Set in refrigerator then cut into squares or fingers
6.Store in refrigerator.

4 eggs
3 1/3 cup all purpose flour
2 teaspoons baking soda
2 teaspoon cinnamon
1 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon nutmeg
3/4 teaspoon ground cloves
*chopped pecans

Heat oven to 350. In a large mixing bowl, combine the pumpkin, sugar, water, vegetable oil and eggs. Beat until mixed well.

Measure the flour, baking soda, cinnamon, salt, baking powder, nutmeg and ground cloves into a separate bowl then stir until combined. Slowly add the dry ingredients to the pumpkin mixture, beating until smooth.

Grease two 9X5 inch loaf pans and dust them with flour (or use Pam). Evenly divide the batter between them. Bake for 50-70 minutes or until toothpick inserted into the center comes out clean. Cool for 10-15 minutes.

Remove from pans by inverting them onto a rack and tapping the bottoms. Slice and serve plain, buttered or with cream cheese.



*if you want to add pecans I suggest 2-3 cups, depending on how well you like nuts.

Heat oven to 350

As someone who makes this every year using this recipe, I can honestly say this is some of the best pumpkin bread I've ever had!!

Here are my additions for the gift list. The recipes make huge batches so you can make several gifts at once.

Chai Latte Mix

2 cups nonfat dry milk powder, divided
1 box or 4 cups of brown sugar
2 Tbsps ground cinnamon
1 tsp ground nutmeg
1/2 teaspoon ground cardamon
1 1/2 tsp ground ginger
1/4 tsp allspice
1/8 tsp cloves
2 cups non dairy powdered coffee creamer
2 cups confectioner's sugar
3 cups instant tea, unsweetened
1 (3.4 ounce) package instant vanilla pudding mix

Mix 1 cup non-fat dry milk with brown sugar, cinnamon, nutmeg, cardamon, ginger, allspice, and cloves. If desired; mix in the blender or food processor to get the lumps out of the brown sugar. (I prefer to use my hands, that works just as good).

Combine the remaining 1 cup nonfat dry milk powder, nondairy creamer, confectioner's sugar, instant tea and vanilla pudding mix; mix well.

Start with 2 rounded tablespoons of mix to an 8 ounce cup of hot water; stir. Store in a covered container.


Here's recipe #2:

Hot Chocolate mix

10 2/3 cups (8 quart box) dry milk powder
4 cups instant chocolate flavored drink mix
16 oz. jar of nondairy powdered creamer
2 cups of confectioner's sugar

Combine milk powder, chocolate-flavored drink mix, nondairy creamer and confectioner's sugar.

To prepare hot chocolate use 1/4 cup mix to 3/4 cup hot water. Makes one gallon of mix or 4 gallons of hot cocoa.

Yes it is addictive, one of my girlfriends from church is always asking for refills on that and my hot chocolate for her grand daughters.:lol: In fact I gave them each a jar of my hot chocolate for their birthdays. They love it.

I am making christmas mice and hedge hogs for tonights party. Don't laugh they are cute and yummy.
Recipes
Christmas mice
marchiano cherries with stems
hershey kisses
Wilton chocolate pieces
sliced almonds (small bag)
Chocolate sprinkles(long skinny ones)
Red and white icing(writing tubes)

unwrap hershey kisses to do have ever many mice you want. One kiss for each mouse.
break almonds in half one slice for each mouse they need two ears.
Melt wilton chocolate pieces.
Dip one cherry in melted chocolate and set on wax paper with the stem being the tale. stick one hershey kiss on the cherry and quickly put the ears on (almond slice) Put two small red dots to hold two chocolate sprinkles on each side for the wiskers. Two small white dots for the eyes. Now you have a christmas mouse. When you make two you have Christmas Mice hehehe.

Christmas Hedge hogs

1 bag of snickers mini candy bars
Hershey kisses White chocolate or dark chocolate.
Chocolate sprinkles
Sliced almonds cut in fourths (for small spiky ears)
Red icing and white icing. (writing tubes)
Melted wiltons chocolate

unwrap enough kisses to make the number of hedge hogs you want. One for each hedge hog.
unwrap snickers mini's one for each body of hedge hog.
Melt wiltons chocolate and dip each snickers in chocolate completely covering the snickers and then immeadiatly dip in sprinkles covering entire snickers bar, then dip one hershey kiss in chocolate to cover the big end up the side alittle. Adhere to snickers bar to make the head and sprinkle the chocolate sprinkles around the kiss to cover the seam of the kiss and snickers. dip almonds to adhere to the seam for ears.
Now add the eyes with two white dots and the tip of the kiss with red for the nose. All done.

here is candy cane bark
youll need..waxed paper..cookie sheet..white almond bark...
and candy canes...

***melt your candy bark in microwave or double boiler until melted.
bash up your candy canes a bit inside a samich baggy..make sure to
cover yoyr counter before so you dont ruin it.
place a waxed paper on cookie sheet.and mix the candy canes into the
bark.then pour onto the wexed paper.let dry and break into small pieces
for packaging..so easy...

unwrapped kiss in center of each pretzel.melt in the oven a few
minutes.remove and put a red or green m&m in center of kiss.chill in
fridge 10 minutes.makes a nice gift..
I dont remember where i got this from maybe a magazine.

Yes this is exactly something I have been wanting to make and I found it here. Simple and good too. Love the chocolate/pretzel combo. Great gift idea and make me a batch for myself!

I have been working on fudge the last few months and have made a cranberrie fudge last time. I think that will be a lovely Christmas food gift. And yummie too!
