 Don't throw your cherries at the screen, I've been a little busy, but I'm posting several recipes today so you can plan ahead for your next celebration.

:-) You'll see that some just shout "Merry Christmas" while others shout "that hits the spot anytime of the year".

Irish Eyes cocktail Look into each other’s eyes and say "Tá tú go h-álainn" (You're beautiful).

1 oz Irish whiskey
1/4 oz crème de menthe, green
2 oz cream
maraschino cherry for garnish

Pour the ingredients into a shaker with ice cubes.
Shake well.
Strain into an
Garnish with the maraschino cherry.

Traditional Irish Coffee

2 tbsp. heavy cream
1 1/2 oz Irish Whisky (whiskey if you are American).
1 tsp. Sugar syrup or superfine sugar coffee

Mixing instructions:
Add sugar (preferably brown) to strong hot black coffee and stir until sugar is fully dissolved.
Add Irish whiskey. Leave enough space in the glass to add the cream.
Carefully "float" the cream on to the coffee by using the back of a spoon.
Do not stir.
Sip the coffee through the cool cream to truly enjoy this classic.
Whipped cream is a delicious substitute for the cream.

Wee Colleen (non-alcoholic cocktail) Mocktail
3 dashes grenadine
3 oz. Orange juice
2 oz. Schweppes (or personal favourite) Club Soda
1 oz. Lemon juice
Mixing instructions: Shake juices and grenadine with ice. Pour into a highball glass and add Club Soda. Add orange and lemon slices to decorate.

Don’t forget to make an Irish Toast:

"May you have all the happiness
and luck that life can hold—
And at the end of all your rainbows
may you find a pot of gold."

:x Okay so how many folks were wondering why I posted St. Pat's beverages before Christmas ones?

http://i7.photobucket.com/albums/y273/AuntieMistletoe/ShamrockShower.gif I'm Irish, that's why.

Party Punch

INGREDIENTS:
3 (3 ounce) packages fruit flavored gelatin mix
4 cups white sugar
13 cups boiling water
2 (46 fluid ounce) cans pineapple juice
1 (16 ounce) bottle lemon juice
concentrate or 1 -2 cans frozen concentrated lemon aid
2 (2 liter) bottles lemon lime soda or ginger ale,
chilled

DIRECTIONS:
1. In a large bowl, combine gelatin and sugar. Stir in boiling water until mixture is dissolved. Stir in pineapple juice and lemon juice concentrate. Divide into 2 containers, and freeze until solid.
2. To serve, place gelatin mixture in punch bowl, and chop into pieces. Pour in ginger ale.

This is beautiful when you float fruit in such as strawberries, kiwi, bananas, etc. I also make ice cubes out of some of the punch so that if you put ice in the punch it doesnt get that watered down taste.

Holiday Punch

2-3 Bananas
6 oz. can fozen lemonade
1/2 can unsweetened crushed pineapple
12 oz. can orange juice
2 cups sugar
3 cups water
4 1/2 quarts lemon-lime pop (7 up.)

In food processor, puree bananas with lemonade concentrate. Combine remaining ingredients except for lemon lime pop in a large bowl; mix with wire whip. Pour concentrate into a couple gallon freezer bags and freeze.
To serve, thaw concentrate until slushy. Pour into punch bowl and add pop. ( I use more pop than called for.)
(I like to make some of the punch up and freeze in small decorative molds then freeze and use for ice.)
