MY FAVORITE GINGERBREAD MEN COOKIES

6 cups all purpose flour
1 tablespoon ground ginger
2 teaspoons ground cinnamon
1 ¼ teaspoon baking soda
½ teaspoon salt
1 cup margarine or butter
1 cup brown sugar
1 cup molasses
2 eggs
2 teaspoons finely shredded orange peel
½ teaspoon finely shredded lemon peel

In a medium bowl, stir together flour, ginger, cinnamon,
Baking soda and salt. Set aside. In a large mixing bowl,
Beat margarine or butter with an electric mixer on medium
Speed for 30 seconds. Add brown sugar and beat until fluffy.

In a small saucepan bring molasses to boiling. Add hot molasses to butter
Mixture; beat on low speed till combined. Add eggs, orange peel and lemon peel; beating on low speed just till combined. Add flour mixture
To molasses mixture; stir with a spoon until mixed. Divide dough into
4 portions, Wrap each portion in waxed paper or clear plastic wrap; chill
1 hour or till firm enough to handle.

Grease a cookie sheet; set aside. On a lightly floured surface roll dough, one portion at a time, to ¼ inch thickness. Using small or large cookie
Cutters, cut dough into gingerbread people, re-rolling trimmings as necessary. Arrange cutouts 1 inch apart on the prepared cookie sheet.

Bake in 350 degree oven about 4 - 7 minutes or until edges or firm and light brown. Cool on cookie sheet for 1 minute. Transfer to wire rack to cool completely. If desired frost and decorate. Makes 5 dozen cookies.

***Note: I found this recipe in a magazine years ago, it was said to have been an old girl scout cookie recipe from Orange or Orange County, New Jersey. This is one of the better Gingerbread Recipes I have ever tried. Use Regular margarine, do not use spreads, diet or soft style margarines in cookie dough. I am a big fan of BUTTER!!!!

I read your receipe and ould like to know what brand of molasses works best and can you use fresh ginger that you grate.

I use Brer Rabbit molasses. And I don't know about the fresh grated ginger, You could try it. Maybe not use as much.
I love ginger, esp the sugar ginger pieces. Its good for a little heartburn too LOL

I love spritz cookies and use the Betty Crocker one from their book from like the 70's....snagged it from my mom. I love them!
But I was looking for another variation...and I found this!
I am gonna have to get myself a cookie press and try these out! (or just do cut out cookies).

Wonder if I can make plain sugar cookies rather then use the pkg they say? I should be able to with no problems.

Eggnog Spritz Cookies

Prep Time: 45 min
Total Time: 45 min
Makes: 4 dozen cookies

Cookies
1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
1/2 cup butter, melted
1 egg
1/2 cup Gold Medal® all-purpose flour
1 teaspoon rum extract
1/4 teaspoon ground nutmeg

Icing
1/2 cup powdered sugar
1 1/2 teaspoons milk
1/4 teaspoon rum extract
Betty Crocker® red and green decorating sugars, if desired

1. Heat oven to 375°F. In large bowl, stir cookie mix, butter, egg, flour, 1 teaspoon extract and the nutmeg until soft dough forms.

2. Fit cookie press with desired template. Fill cookie press with cookie dough; press cookies onto ungreased cookie sheets.

3. Bake 6 to 8 minutes or until set. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 20 minutes.

4. In small bowl, stir powdered sugar, milk and 1/4 teaspoon extract until desired consistency. Drizzle over cookies. Sprinkle cookies with colored sugar.

High Altitude (3500-6500 ft): No change.

Storage
To keep cookies longer, wrap tightly, label and freeze up to six months

Santa's Whisker's" cookies
Makes 60

From the kitchen of Meagan



3/4 cup Margarine
2 cups Flour
3/4 cup Sugar
1 tablespoon Milk
1 teaspoon Vanilla
3/4 cup finely chopped candied red or green cherries
1/3 cup finely chopped pecans
3/4 cup coconut


Beat margarine with an electric mixer on medium to high speed for 30 seconds. Add about half the flour, the sugar, milk, and vanilla. Beat till thourohly combined. Stir in remaining flour. Stir in cherries and pecans. Shape into 8-inch rolls. Roll in coconut. Wrap in wax paper; chill 2- 24 hours. Cut into 1/4-inch slices. Place on an un-greased cookie sheet. Bake in a 375 degree oven 10-12 minutes or until the edges are golden. Cool cookies on a wire rack. Makes about 60.

I missed this post some how when I was on here last night and this morning. I was just thinking it would be a great idea to do a cookie swap on the forum with recipes as we can't all make a cookie and have a party to swap cookies with each other.

I just found a recipe that I am so much trying this year! I will post it here in a while just need to be able to type with two hands instead of one.

Cat and Mouse Cookies

2 and 1/2 cups flour
1/2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. allspice
1/4 tsp. cloves
1 cup butter (2 sticks) softened
2/3 cup sugar
1 egg
1 tsp. vanilla

Sift dry ingredients together. In a large mixing bowl cream butter and sugar together. Add egg and vanilla and mix well. Add dry ingredients a little at a time until well blended. Wrap dough in plastic and chill for 1 hour. Preheat oven to 350 degrees. Roll dough out on a lightly floured surface to about 1/8 inch thick. Dip cookie cutter in flour and cut out our cookies. Bake cookies on ungreased cookie sheets for 8 to 10 minutes. Decorate your cookies and enjoy!

My husband and daughter found this cat and mouse cookie cutter set the first year they went apple picking. (I wasn't able to go because my son was still a baby.) The set came with this recipe and a spice packet. I made them that night and the rest as they say is history. Now when we make Christmas cookies this is one of the main recipes we use. As far as decorating them we usually just eat them the way they are but I think a very mildly sweet icing would go well with them.

If you are looking for a new cookie recipe to try for the holidays, you may want to give this one a try. This recipe gives traditional oatmeal cookies a whole new festive touch by adding dried cranberries to the mix instead of raisins or chocolate chips.

Oatmeal Cranberry Cookies
Ingredients:
2 cups - butter
2 cups - Florida Crystals® Organic Cane Sugar
3 eggs
2 1/2 teaspoons - vanilla extract
1/4 cup - whole wheat flour
2 cups - unbleached pastry flour
1 teaspoon - salt
1 teaspoon - baking soda
1 teaspoon - baking powder
2 cups - dry rolled oats
1 cup - dried cranberries
Preparation:
Preheat oven to 350 degrees F (175 degrees C).
Blend butter and sugar until fluffy. Add eggs and vanilla and mix well.
In a separate bowl sift flour, baking soda, and salt together. Stir into butter mixture until well mixed. Stir in the oats. Fold in nuts and cranberries.
Place dollops on cookie sheet, and keep them spread apart (this cookie spreads). Bake until they fall back down (8 to 10 minutes). Cool and enjoy.
Serving Quantity: 8 to 10

Here is one of my family's favorites:

Spiced Butter Cookies
These cookies are a favorite of ours. We have made them every year since we got the recipe a couple of years ago. The place where we got it from calls them Cat and Mouse cookies because it comes with cat and mouse cookie cutters. It also came with a packet with all the spices in it but fortunately they also give you the breakdown of spices so you can make them over and over again.

Ingredients:

2 1/2 cups flour
1/2 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. all spice
1/4 tsp. cloves
1 cup butter (2 sticks) softened
2/3 cup sugar
1 egg
1 tsp. vanilla

Sift dry ingredients together.

In a large mixing bowl cream butter and sugar together.

Add egg and vanilla and mix well.

Add dry ingredients a little at a time until well blended.

Wrap dough in plastic and chill for 1 hour.

Preheat oven to 350 degrees.

Roll dough out on a lightly floured surface to about 1/8 of an inch thick.

Dip cookie cutter in flour and cut out your cookies!

Bake cookies on an ungreased cookie sheet for 8 to 10 minutes.

Decorate your cookies and enjoy!

And I'm going to try these this year:

Vilhelmiina Cookies
1 cup butter, softened
1 cup sugar
2 Tbsp light molasses
1 egg yolk
1 tsp vanilla extract
2 1/2 cups all purpose flour
2 tsp baking soda

Preheat oven to 350 degrees

In a mixing bowl, combine butter, sugar and molasses; beat until creamy. Add egg yolk and vanilla mix well

In a medium bowl, combine flour and baking soda, gently mix. Gradually add the dry ingredients to the butter mixture, mixing to combine. Do not over mix. Mixture should be slightly crumbly.

Divide dough into fourths. Form 4 bars, about 15" long, and place on an ungreased baking sheet, space well apart. Bake for 15 minutes.

Remove from oven and cut bars into 1 1/2" long pieces. Allow to cool on the baking sheet before serving.

I got this recipe out of my "Just CrossStitch" Holiday Ornament issue. It sounds really good. I can't wait to try it.
